Some people put a piece of broken pottery in the pot, for accelerate the softening of the flesh. Is this scientific? Why?

It is a very dangerous idea. Defective glass plates caused health problems before today. This was reported at the time a scientific journal (Scientific American or New Scientist). To use the broken crockery is to expose the interior that could easily have toxic substances. You can expect more or less to some of the interior to dissolve in water. The meat can be softened in several ways, for example, sprinkle sure papain (an enzyme) obtained from the pineapple.
